Together, they established Le Chai Sobre, France’s first centre of excellence for alcohol-free wine production, in partnership with a local cooperative. Using a gentle, low-temperature distillation process, they remove alcohol while preserving the wine’s structure and vibrant aromatics. Notes of pear, peach, and citrus zest lead to a lively, refreshing finish.
