Aligoté has been cultivated in Burgundy for over 200 years and is at its best in the Bourgogne Aligoté appellation. Rijckaert Florent Rouve wanted to pay homage to this lesser known Burgundian grape that often does not get the attention it deserves. A wine enthusiast from Belgium, Jean Rijckaert started making wine in his favourite region, Burgundy, in 1990. When Jean retired in 2013, he passed on his legacy to Florent Rouve who continues to respect his methods. Crafted through fermentation in old oak barrels, the wine undergoes eight months of ageing without racking or stirring. It's crisp and aromatic with a balanced interplay of acidity and minerality.
